The ultra-simple vegetarian chili that doesn't lack anything, not even meat.
Ingredients
800 g of cooked red beans
400 g of crushed tomatoes
1 diced red bell pepper
1/2 diced cucumber
1 large sliced onion
2 crushed garlic cloves
3 tbsp of AMAÏ sauce
1 tsp of cumin
1 tsp of smoked paprika
1 tbsp of neutral oil
250 g of long rice
Salt
Preparation
Sauté the onion, bell pepper, and garlic in the oil, add the cumin and paprika and let them sit for a minute to awaken their fragrance, deglaze with the AMAÏ then pour in the tomatoes and let reduce for five minutes.
Add the beans and cucumber with half a glass of water, simmer for twenty minutes on low heat, then mash a ladle of beans against the wall to bind everything together.
Adjust the salt off the heat and serve over rice with avocado, cilantro, and a spoonful of yogurt.
