Made with slow-cooked onions, yellow habaneros from Brussels, olives from the Niçois hinterland, Mediterranean anchovies and a touch of garlic and herbs from the maquis, it's a familiar balance of flavors when you've been around Nice, if you've ever had a craving for pissaladière, bought at the last minute in a village bakery and devoured in the shade of a large plane tree, sitting by a fountain, between two hot mountain passes.
